Quinoa for breakfast?! Why not! Quinoa is one of my favourite grains (though technically a seed), not only because it is highly nutritious and gluten free but it is also delicious alternative to oats. It is also the most complete protein of any grain containing nine essential amino acids which means that it will keep you feeling full for hours. I hope you enjoy my:
Apple & Blueberry Breakfast Quinoa
1 cup quinoa
1 cup apple juice
1 cup water
1 cup blueberries
¼ tsp cinnamon
3 tbs almonds roasted & roughly chopped
Rinse & drain quinoa thoroughly. Place in small saucepan with apple juice and water. Bring to the boil then reduce to simmer, cover and cook for 15 minutes until all the liquid has absorbed. Leave to rest for 5 minutes then fluff up with a fork. Transfer to a bowl and stir through blueberries and cinnamon. Serve with a dollop of yogurt and a sprinkling of almonds. This makes 3 servings and can be kept in the fridge for a few days.
